Grapefruit Yogurt

With home canned shredded grapefruit 

 

I tend to over-buy grapefruit.  I love eating grapefruit, but I don’t like the mess it makes when peeling it, so it sits in the crisper and doesn’t get eaten.  I decided if I peeled all of the grapefruit at once, I could can it and have it whenever I want without the sticky mess.  I’m also a big yogurt fan.  I particularly like the thick, plain Greek yogurt which goes really well with fresh berries and canned grapefruit.  Drizzling it with honey adds just the right amount of sweetness.  This recipe has heart-healthy rolled oats.  It also has a good amount of protein and a little fat, which will keep you satisfied throughout the morning.  This recipe is so simple it’s hardly worth writing down, but the picture is so lovely, I wanted to include it in the breakfast section.

Yogurt and Grapefruit

Yield 1 serving

Ingredients

1 125mL jar of pink grapefruit
½ cup plain high protein Greek yogurt
½ cup blackberries
¼ cup rolled oats
1 Tbsp liquid honey

Directions

Add Greek yogurt to a shallow bowl.  Top with grapefruit, blackberries and rolled oats. 
Drizzle with honey.
