Spaghetti Bolognese
with home canned tomatoes
Ingredients
6 - 8 slices double smoked bacon, chopped
1 pound ground beef
3 celery sticks, diced fine
2 medium sized carrots, diced fine
1 medium sized yellow onion, diced fine
4 cloves of garlic, diced
1 heaping Tbsp home canned tomato paste
1 quart jar of home canned tomatoes
2 cup red wine
2 cups home canned chicken stock
1 Tbsp Basil
1 Tbsp Oregano
1/2 TbspThyme
1/2 Tbsp Chilli Powder
1-2 Tbsp Brown Sugar (Optional)
Salt & Pepper to taste
Parmesan cheese
Fresh basil
Directions
Begin by frying bacon over medium heat. If desired, render more fat from the bacon by adding it in the pan when the pan is still cold and allowing it to heat up with the pan. Once cooked, remove bacon and set aside.
Add a small amount of oil if necessary. Then add the diced celery, carrots and onion to the pot. Add a pinch of salt. Sweat vegetables by cooking on medium heat for at least 5-7 minutes, longer if desired. Add garlic and cook an additional 3 minutes.
Add ground beef to pot. At the same time add the basil, oregano, thyme, chilli powder, salt and pepper. Cook meat thoroughly until no pink is visible in the meat.
Once ground beef is cooked, add bacon back to the pot. Add red wine, tomatoes and tomato paste. Allow to simmer until wine begins to evaporate and becomes thicker. Then add chicken or beef stock. Continue to cook until sauce is of desired thickness. Add more spices to taste if desired. If sauce tastes acidic, add 1 - 2 tablespoons of brown sugar.
Add parmesan cheese and fresh basil when serving.
