Asparagus Season

Asparagus is one of spring’s very first arrivals and luckily, we have an asparagus farm in central Alberta that supplies many, many surrounding communities.   Asparagus is also easy to plant. It’s a perennial, so it comes back every year and it’s easy to care for, so perhaps it’s time to consider this vegetable in your garden.  Loaded with vitamin K and high in fiber, asparagus is good for not only bone health but for the digestive system as well.  Choose asparagus with long spears and closed, compact tips.  Now’s the best time of the year to think about canning or pickling asparagus. Pickled asparagus is a must in a classic vodka Caesar, and they appear on every charcuterie tray I put together.
