Caesar

With home canned tomato juice, pickled asparagus and pickled beans

 

The Classic Canadian caesar has become a canadian staple...

I would never consider hosting a function without having all the Caesar fix’n on hand 🖐. I think I would be considered a poor hostess without vodka and Clamato juice. That being said, I like to use my own home canned tomato horseradish juice in my Caesars. I then add clam juice to give it that classic Caesar taste. The horseradish gives it a bit of a kick that livens up your tastebuds but it is the fix’n that really bring the caesar to life. There are so many condiments that compliment the Caesar be it dill pickles, pickled green beans, fresh celery or a strip of crispy bacon. These days, it can even be ordered as a whole meal in the local pub with sausage, pickles and vegetables. You can even order it with a beef slider on a wooden skewer dropped in your caesar.

Ingredients (4 servings)

1/4 cup lime juice
Caesar rimmer ( mix together 1 tsp celery salt, 1 tbsp Montreal steak spice and 1 tsp Vancouver Island sea salt) and place in a shallow dish.
1 lime
4 oz vodka
ice to fill 4 glasses half full each
4 cups homemade tomato juice with horseradish
1 cup clam juice
tobacco sauce or any hot sauce you like 🌶
Worcestershire sauce
salt
pepper
pickled green bean
pickled asparagus

Directions

  • Rub 1/4 lime around the rim of a glass. Dip the glass rim in Caesar rimmer.

  • Add ice until glass is half full.

  • Add 2 oz vodka, tomato juice with horseradish. Add 1/4 of clam juice, 1/4 of the lime juice, a dash tobacco sauce, a tsp Worcestershire sauce, sprinkle of salt and pepper.
    Throw in a couple of pickled green beans and pickled asparagus and the lime slice.
